It’s said that breakfast is the most important meal of the day, but I find it the most difficult to actually consume. In the mornings, there never seems to be enough time – no matter what time I wake up. I tend to grab a breakfast bar and eat it in the car. An hour later, I find myself still super hungry and counting down the hours until lunch time — which is at 12:40!!
This year, I’ve set a goal to eat a “real” breakfast at least 3 days per week. By “real”, I just mean substantial. Often, I allow the amount of time breakfast takes to stand in my way because I have to be at work by 7:30am, but I’ve thought of some quick and easy breakfast options for singles or families on the go. Items like: fruit, yogurt, and smoothies are fast on the fly. But, pancakes, hard-boiled eggs, and a quiche can be pre-made and stored in the fridge for up to three days!
Sunday brunch is totally my jam. Whether I’m sharing this meal with family or friends, I tend to treat myself and my go to item is a quiche. A quiche sounds really fancy, but it’s actually very simple to make. I can make a quiche on Sunday morning and it will last in the fridge for three days. It’s so delicious I could eat this for breakfast, lunch, or dinner.
Hence why, I’m coining this breakfast item as my “back to school” breakfast item. I just finished baking my quiche in the oven, so I have breakfast for the first part of this upcoming week. I’m going to share my recipe because it’s too great not to share with the world.

Spinach, Bacon & Cheese Quiche
Ingredients:
1 9-inch pie crust
1 cup of heavy cream
5 large eggs, beaten
1 ยฝ cups of baby spinach (can chop, I use whole leaves)
1 cup of cheese (I use gruyere & swiss) you can use any type you’d like
5-6 slices of cooked, chopped bacon – totally optionally (I’ve had it with turkey bacon and without)
ยฝ teaspoon: onion powder
ยฝ teaspoon: pepper
ยผ teaspoon: sea or kosher salt

Process:
1. Pre-heat your oven to 375 degrees and place the pie crust into your pie plate
(or use a bought pie crust in a foil pan).

2. Then, you’ll start with a layer of spinach, bacon, and cheese.
3. Add a second layer of spinach, bacon, and cheese.
4. In a bowl, you’ll whisk together the 5 eggs and 1 cup of whipping cream. I add in some black pepper, salt, and garlic powder (and/or onion powder) for taste in the mixture.
5. Slowly pour this mixture in your layered pie pan and pop in the oven for 35-45 minutes. I tend to bake my quiche the entire 45 minutes for my cheese to be golden and crisp.



In 5 easy steps, you are done and have a delicious breakfast quiche! Enjoy.
